Pimhill Fluffy Flapjack

Pimhill Fluffy Flapjack
  • 100g butter
  • 200g soft brown sugar
  • 340g Pimhill muesli
  • 100g Pimhill Fine Brown flour
  • 2tsp bicarbonate of soda
  • 3 generous tablespoons of local runny honey

Mix the muesli and flour in a large bowl.

Melt the butter, sugar and honey in a saucepan and then add the bicarbonate of soda dissolved in 2 tablespoons of boiling water, careful as it may fizz if your pan isn't big enough!

Stir all the mixtures together and put in a greased baking tin. Bake at 160 degrees, Gas Mark 3, for half an hour, until golden all over but still a bit soft in the middle.
