Oat & Sultana Cookies
A really easy and quick delicious chewy oaty cookie that is an excellent afternoon snack with a cup of tea or perfect for lunchboxes.
Ingredients:
- 100g unsalted butter
- 150g soft brown sugar
- 1 free range egg
- 1 tsp vanilla extract
- 100g plain flour
- 1/2 tsp ground cinnamon
- 1/2 tsp baking powder
- pinch of salt
- 125g Pimhill Organic Jumbo Oats
- 100g sultanas
Preheat your oven to 170°C and line 2 baking trays with parchment.
Beat the butter and sugar together (either in a stand mixer, with a hand mixer or by hand). Then add the egg and vanilla extract and combine.
Mix in the flour, cinnamon, baking powder, salt, Pimhill Organic Jumbo Oats and sultanas. Beat the mixture until a stiff dough forms.
Scoop out the mixture into balls, with the help of a tablespoon, and place on the baking trays, leaving room for them to spread. Bake for 12 -14 minutes until the edges start to turn golden brown.
Cool on the tray until they set, and enjoy!
